The most important oil for our diet, is the olive oil, the so-called "gold of the Mediterranean" and it was not accidentally given the above name since it is the basis of the famous Mediterranean diet. It offers our body a plethora of nutrients especially a fact that makes it a useful and necessary component of our diet.
It is considered the most digestible oil compared to others on the market (eg sunflower oil, sesame oil, etc.) and due to its content of vitamins and fatty acids (oleic, linoleic, pulsating), as well as phytosterols, it is given important antioxidant properties. helps our body fight free radicals that are harmful. From the fatty acids contained in olive oil, great value is given to linoleic acid, since its lack leads to significant problems such as growth retardation, metabolic disorders, etc. It also contains a significant amount of tocopherols (vitamin E) and polyphenols, substances that also act as antioxidants and help lower blood pressure (hypertension).
Olive, in particular, is a rich source of biophenols, which have strong antioxidant properties and are intensively studied for possible pharmacological applications. Especially extra virgin olive oil contains another phenolic derivative, olive oil. This substance has analgesic and anti-inflammatory action, similar to that of a known drug. Some scientists hope that this substance can help fight cardiovascular disease, Alzheimer's disease and even some forms of cancer.

But beyond its enormous benefits in our daily diet, it can, like all substances, become harmful to our body if not used properly. That is why it is better to eat it raw instead of fried and to avoid exposing it to high temperatures and for a long time. It is also good to avoid its abuse as it can become dangerous to the health of the heart, blood vessels, liver and gallbladder. After all this, we urge you to shake off any prejudice about fats, and to consume without fear, the treasure of nature called olive oil, but without forgetting that "excellent in every way".
