One of the keys to achieving the best oiling result is the appropriate harvest period of the olive as well as the time of its transfer to the mill.
One of the main issues in the final quality of olive oil is the harvest season, the last one is specific and concerns the period between November and the end of January, when the olive tree bears fruit.
Sometimes this happens a little earlier than the aforementioned period. What really matters at this stage is the choice of producer in terms of quality / quantity.
The more unripe the fruit, the higher the quality achieved in the final result (increased organoleptic characteristics) and the smaller the amount of production, hence the unripe oil.
The slower the harvesting process, the higher the production quantity with lower organoleptic characteristics and therefore lower quality.
